How To Prepare Usucha
We’ve brewed this ceremonial grade matcha many times, and this is the best matcha, water, heat, and whisking ratio that we found to produce the best taste. This is only a guide, you’re certainly most welcome to create your own to cater to your taste buds.
- Place chasen (whisk) in chawan (bowl) and pour hot water to make the chasen’s tines flexible so it does not break when whisking.
- Pour out the water and dry the chawan.
- Sift 2 chashaku scoops (about 2g) or 1 teaspoon into the chawan.
- Pour 70ml of hot water (70℃) and whisk for 30 seconds. Froth will appear.
- Take a sip and savour the premium ceremonial grade matcha made with so match(a) love.
This is how we like to prepare our usucha but your perfect matcha brew could differ. I suggest experimenting until you find it. You can start with 1 chashaku scoop (1g) to 50 ml of hot water (not boiling). Or 2 chashaku scoop to 100 ml of hot water. Don’t make the mistake of using too much water thinking to get a lighter less bitter tea. What you’re only doing is diluting the flavour. Ujiha’s Ichi ceremonial grade matcha has slight to no bitterness, specially made to be enjoyed independently without additives.
How To Prepare Koicha
Koicha, on the other hand, is a stronger-tasting and thick tea. It is concentrated and therefore accentuates every flavour. Follow the first 2 steps of preparing usucha.
- Follow the first two steps for preparing usucha.
- Sift 4 chashaku scoops (about 4g) or 2 teaspoons into the chawan.
- Pour 50ml of hot water (not boiling) into the chawan.
- Mix it well until there are no clumps. Foam won’t appear, and there is no need to whisk.
